Flower-Studded Lollipops

Flowers are great to have around at a party, and not just on the table. Your guests will love going home with these flower-studded lollipops as a favor. My friend and modern pioneer Georgia Pellegrini shows us how to make these fun, whimsical treats.

Materials for Flower-Studded Lollipops:

  • Silicone lollipop mold
  • Lollipop sticks
  • 1 cup sugar
  • ½ cup light corn syrup
  • ¼ cup water
  • 2 drops food coloring (optional)
  • 1 tsp choice of extract
  • Fresh herbs
  • Fresh Edible flowers

Instructions:

  1. Spray silicone molds with vegetable spray.flower-studded lollipops
  2. Add your fresh herbs and flowers to the mold. Get creative. You can make patterns and combine them however you’d like.
  3. In a saucepan, combine the sugar, corn syrup, and water. Stir until the sugar dissolves and let simmer for about 5 minutes, until the mixture reaches 300˚ degrees F*.
  4. Turn off the heat and let the mixture cool until the simmering stops.
  5. Add your flavoring elements and food coloring (optional). I used cinnamon but you could use coconut, vanilla, or almond extract. It’s a chance to experiment. We left ours clear so the flowers and herbs could really shine.
  6. Working quickly, add the candy mixture into the molds by the spoonful. If the mixture starts to harden, you can put it back on the stove and warm it until it softens. Once the molds are full, set aside for a few hours until the lollipops are fully hardened.
  7. For party favors, place some plastic wrap over them and add a bow.

*If you don’t have a candy thermometer, use an ice bath. Take a spoonful of the mixture and drop it into the ice cold water. When it is brittle and snaps in half, your mixture is ready to go.
